Zeferan Cappadocia Executive Chef Ramil Baghirov portrait
Ramil Baghirov Executive Chef

Executive Chef Ramil Baghirov leads the Zeferan Cappadocia kitchen, carrying the brand's Azerbaijani culinary heritage to the fairy chimneys of Central Anatolia. With a craftsman's respect for tradition, he reinterprets time-honoured recipes for the table you'll sit at tonight — every plate a quiet dialogue between two lands.

Named after saffron — the most precious spice in Azerbaijani cooking — Zeferan brings a centuries-old culinary tradition to the fairy chimneys of Cappadocia. Every ingredient is sourced with intention, every recipe carries the soul of its origin.

Set within the AJWA Hotel in Mustafapaşa, our kitchen bridges the ancient Silk Road flavors of Azerbaijan with the volcanic terroir of Central Anatolia — a dialogue between two lands, told through food.

The rituals begin below: the plate, the hand, the ceremony, and the view.

Less menu,
more memory

At Zeferan, signature dishes are treated as hosted moments: opened at the table, poured with care, and served on pieces that carry their own history.

Signature Ceremony A signature dish, made to be witnessed
01

The table opens

A pastry dome is broken tableside so aroma, sound, and story arrive before the first bite.

02

The plate remembers

Antique service pieces turn plating into a quiet archive, not a decorative flourish.

03

The host stays close

Service is choreographed around warmth: the right table, the right pace, the right final tea.

Carved from
Cappadocian
stone

Inspired by the grand caravanserais of the Silk Road, our dining rooms blend Anatolian stone masonry with Azerbaijani artistry — handwoven carpets, copper craftsmanship, and views that stretch across the valley.

Private Dining

Intimate stone-walled rooms for celebrations and private gatherings, each with dedicated service.

Panoramic Terrace

Dine under the stars with uninterrupted views of Cappadocia's fairy chimneys and live acoustic music.

Garden Terrace

A permaculture garden of lavender, roses, and liquidambar trees — where the landscape becomes part of the meal.

Words from our guests

The Shah Plov alone is worth the trip to Cappadocia. When they cracked open the pastry dome at the table, the saffron aroma was extraordinary.

Elena V. Travel Writer, Condé Nast

Dining on the terrace at sunset, watching hot air balloons drift over the valley — there's nothing else like it. The food matched the setting perfectly.

Mehmet K. Architect, Istanbul

I've eaten at Michelin-starred restaurants across Europe. Zeferan stands apart — the authenticity of the flavors, the warmth of the service. Truly world-class.

Sophie L. Food Critic, Le Monde

We hosted our anniversary dinner in the private room. Stone walls, candlelight, a seven-course Azerbaijani menu — the team made every moment feel considered.

James & Aylin R. Anniversary Guests

The Sadj ceremony is pure theater. Watching the chef work the iron plate tableside, explaining each herb — it's education and entertainment in one.

Zeynep A. Chef, Ankara

The garden terrace in spring is magical. Lavender in bloom, the scent of roses, the sound of birdsong. You forget you're at a restaurant.

Lara T. Photographer

As an Azerbaijani living abroad, finding this level of authenticity in Cappadocia moved me. The Lavangi tasted exactly like my grandmother's.

Farid M. Guest from Baku

Recommended by our hotel concierge as a 'must' — they were right. Ranked it the best meal of our two-week Turkey trip.

Maria & David S. Guests from London

The copper samovar tea service after dinner was the perfect ending. Such attention to tradition and ceremony — you can feel the reverence in every detail.
